Yes, Kale. Look how much you get if you win!

One week after someone took down 70 hot dogs in the biggest food eating competition of the year at Coney Island, the Taste of Buffalo will have their own eating competition –but a little bit healthier. The Independent Health Foundation’s Healthy Options program is bringing The World’s Healthiest Eating Championship to Buffalo! Kale Yeah!

Competitors will see how much kale they can eat in eight minutes, and the winner will win the $2,000 prize and the Kale Cup! The competition will begin at 2 p.m. on Saturday at Buffalo City Hall's portico in Niagara Square.

But why Kale? Why not anything else? Well, kale is super healthy – it actually is one of the most nutritional vegetables out there. In just a 100 gram serving it packs in 49 calories, vitamins A, C and K, iron, Calcium, potassium and phosphorus!

In a city known more for their fried food this might seem a little out of the ordinary, but could Buffalo be on a new path? Michael Cropp, MD, President & CEO,Independent Health and President, Independent Health Foundation thinks so:
